I want to change the font of the GDScript editor to something like 'Courier New'. I went to the global editor settings, but all I see is a 'custom font' option that only takes .FNT fonts (which are, from what I've read, an obsolete font format)

*.fnt is Godot's internal font format.
Before you can use your font as the editor font, you have to import it (Import → Font). Then you will have a *.fnt file which you can select as the global editor or text editor font.
