I’ve created a 3d sphere with the CSG node. How can I make this sphere hollow? That is, if I move the camera within the sphere, I’d like to still be able to see the sphere, instead of having it turn invisible.

Open material properties and find flag for culling and set it as disabled. If You are using shader material type there render_mode cull_disabled
