How does this actually work?
How would I use uv2?

Can I split the two UV's to affect different parts of a mesh, if so, how?

UV2 is for any textures that should overlap the UV1 albedo texture, examples of this is the emission or detail effects. In the inspector the effects that can use UV2 either have a checkbox or a dropdown to switch between the UVs.
