how i can export just an escene as an pck file ?

i want to follow the tutorial Exporting packs, patches, and mods — Godot Engine (3.1) documentation in English, but do i have to export the complete game or i can export just one scene ? if so how i do it ? , what options should i change in the export menu ?

Another question , can i test all this whit the preview ? or only works whit deployed projects
