Godot is a great tool but I find the editor to be a little lacking. I would prefer to use sublime text but It would bother me to be constantly switching between programs. I would love if I could embed sublime and use it within Godot. Is there any way to replace the godot editor with sublime?

No. Godot cannot embed another program within itself, and I don't think Sublime can either. If there is a way to do it using the OS windowing system, it will be much more complicated to get right than being worth the hassle.
Also, Sublime isn't open source, so the task of using it as a library subsystem is not even doable.
