How different are these branches? I can't use 3.1 because of some issues with OpenGL 2.0, so I'll stick with 2.1.5 for now, but in case I want to move to 3.1 somewhere in the future, will it be difficult in terms of knowledge? Will I have to learn the engine, scripting, gui, etc. again?

It is kind of a hassle , the IDE changed a bit, the elements / nodes also, and some properties. GD script is still GDscript but for example, you now have the albedo property and albedo_texture of a mesh where previously they were .... something else.

You will have to adjust you scripts and you can't easily import a project from 2.x to 3.x as per my experience...
