Hey, I was wondering if it is possible to change the settings of the engine, so the project manager won’t close after I open a project.

I don’t think that’s possible (?), but you can quit from the editor directly back to the project manager via Project | Quit to Project List

No, but you can start multiple project manager instances and open multiple different projects at the same time. Opening the same project multiple times is not supported – Godot currently won’t warn you about this, but many issues will crop up if you open the same project in multiple editor instances (such as file saving conflicts).
A setting for keeping the project manager open after editing a project could be added, but you’d have to open the editor first to change its value as editor settings can’t be changed from the project manager yet.
