My wife has difficulty reading the scene tree on inherited scenes, and I can’t find any option to change the font color. Ideally I could change it to be a bright yellow so that it can be easily distinguished still.
Have you looked at the text editor colors under Editor Settings… → Text Editor?

Yes, I have looked under all the options, and none seem to indicate that they control the color of the inherited nodes in the scene tree.
