I'm still new to using NavMeshes and seeing if this could be pulled off in the engine.
im wanting to be able to remove parts of the navmesh if like i create a blockage or something unmovable during gameplay.

Each part of the gridmap has a navmesh.

I don't know if will work but you can try changing a cell item to one without NavigationMesh or just removing the cell item.
